My goal this year is to cut my caffeine consumption down, even totally eliminate caffeine all together. I KNOW! I KNOW- I am totally insane.. Honestly don’t know if I could give up my daily morning cup of Joe- but at least keep my consumption down to one a day. Let’s talk about Quinoa (KEEN-wah)… Quinoa is considered a SUPERFOOD! It’s gluten-free, high in protein and one of the few plants that contains all nine essential amino acids. It’s also high in fiber, magnesium, B-vitamins, iron, calcium, phosphorus, vitamin E and other various antioxidants. Quinoa is a grain crop that is grown for its edible seeds. Quinoa used to be referred ad the “mother of all grains” and was held sacred by the Inca Empire. There are three main types: white, black and red. Quinoa is considered an anti-inflammatory food. It’s also much higher in fiber than most grains, with on source finding 17-27 grams of fiber per cup. I have started to substitute Quinoa for rice, potatoes and other starches. Happy Snacking....

Let’s talk snacking- we all do it. We either crave something sweet, crunchy, salty, or a combination of all three…. I have some suggestions. I don’t know the difference between a Jam and a Sweet Potato (according to Google- Yams and Sweet Potatoes are biologically unrelated plants. In the U.S. the names are used interchangeably.)- for this post- I will call them Sweet Potatoes- when I am craving something sweet- these babies are my favorite snack. On my meal prep days- I will steam 5 -6 Sweet Potatoes in my instant pot (if you don’t have an instant pot- you are really missing out- will talk more about this in another post). I add a cup of water/or broth and steam them for 20 mins and they come out perfect every time. Weekday afternoons- around 230pm when you get the craving for that candy bar- have a cooked Sweet Potato handy to snack on. I eat them cold (yes, I am weird). Crappy Food and all :-)

So- life happened again and I may have slightly fallen off my way of eating. We took the kids on a road to Galveston, TX. Of course we had to stop in Waco on the drive home. You can’t go to Texas and NOT stop at Magnolia Market! More on that later…   15 hours in a car with 3 kids- I didn’t almost make the healthiest choices- but I didn’t mindlessly eat either. Spending 3 days on the beach, swimming, fishing off the pier day and night, and not eating the best. I can tell you- my body can feel the difference. After the third day of being off diet- I could feel my overall body aches coming back, along with the puffiness, and my hips- oh my hips hurt. We went out for Chinese food the first night in Galveston, TX- the place was close to the hotel and we were starving. Easy Peasy Blueberry Protein Shake

What's the saying?  An Apple a day keeps the doctor away.  I believe the same is true in regards to Blueberries. The berry may be tiny, but it packs a serious punch when it comes to nutrition. Turkey Apple Hash

One of my favorite go to meals- for Breakfast, Lunch or Dinner is the Basic Turkey Apple Hash Skillet.  I love this skillet because you can make lots of variations. Add you favorite veggies (Brussels Sprouts, Squash, sweet potatoes) or your favorite greens (Kale, Spinach, Swiss Chard). The seasoning stays the same. Cinnamon, Cumin, Turmeric, and Nutmeg. 1lb. Ground Turkey 1 Large Apple Diced (large chunks) 2 cups of Sweet Potato ( large chunks) 2 cups of Greens (your favorite) 2 cups Veggies (Brussels Sprouts- my favorite) 1 ½ tsp cinnamon ½ tsp turmeric 1 tsp cumin ½ tsp nutmeg Salt and pepper to taste 2 TBSP Coconut oil In a large skillet brown ground turkey- season lightly. Once browned- remove from pan- add coconut oil. Add Sweet potatoes, veggies of your choice and saute till tender. Add greens and apples and the rest of the seasonings- mix in cooked turkey. Let’s talk protein shakes. I will be honest. I am not a fan. Maybe because they taste chalky. Or that I don’t tolerate whey/soy proteins very well. The last time I has had a Strawberry Soy Protein shake, I ended up in anaphylactic shock and in the ER for 4 hours. I have stayed away ever since. Step outside your box and get creative- it’s not as limiting as you think.

What does a healthy breakfast look like to you? Bacon, eggs, hash browns and toast? Coffee with cream and sugar? Fruit smoothie? For people with inflammation issues, celiac disease, IBS (Irritable bowel syndrome) and others these foods are triggers and can cause extreme discomfort and an exacerbate inflammation in the body. Here is my list of some common inflammatory foods. (some may surprise you) 1.        Sugar (white and sweets)- This includes soft drinks and sweetened juices. Research shows that sugar is one of the most addicting substances. It is highly inflammatory. Sugar is a hard habit to kick- much like smoking- your body will crave it. To reduce your consumption eat fresh fruit instead of that candy bar. 2.        Synthetic sweeteners- (Splenda, aspartame, Equal, NutraSweet, etc.) in diet sodas- stay away from it. Success consists of going from failure to failure without loss of enthusiasm. – Winston Churchill All too often, when something does not quite go our way, we lose a client, a job, a rejected presentation and so on, and we feel defeated, depressed, and like a failure. We tend to invert ourselves into self-loathing thoughts and self-deprecation. Why do we do that? Because- it is easy and surprisingly a comfortable space to be in. Curled up with a box of tissues and a tub is Ben & Jerry’s, sobbing how nothing is going right in your life and you are just a big fat loser. However, you are in fact NOT a loser. We all go through moments where we throw up our hands and wave a white flag. The key is to move on quickly. Do not allow yourself to act like a pig in mud, wallowing in your depressive thoughts. It’s been a struggle- you know L-I-F-E! Let’s be honest- It’s hard. Trying to balance your personal needs with the needs of your family. The constant unrelenting juggling of work, family, money, extracurricular activities, household chores, and personal health. The list goes on and on. Something was bound to fall to the wayside. For me- it was my health; physical and mental health. I have struggled with my weight for as long as I can remember. 10 years ago, I successfully completed Gastric By Pass Surgery but managed to gain some of my weight back.
