Turkey Apple Hash

One of my favorite go to meals- for Breakfast, Lunch or Dinner is the Basic Turkey Apple Hash Skillet. I love this skillet because you can make lots of variations. Add you favorite veggies (Brussels Sprouts, Squash, sweet potatoes) or your favorite greens (Kale, Spinach, Swiss Chard). The seasoning stays the same. Cinnamon, Cumin, Turmeric, and Nutmeg.

1lb. Ground Turkey
1 Large Apple Diced (large chunks)
2 cups of Sweet Potato ( large chunks)
2 cups of Greens (your favorite)
2 cups Veggies (Brussels Sprouts- my favorite)
1 ½ tsp cinnamon
½ tsp turmeric
1 tsp cumin
½ tsp nutmeg
Salt and pepper to taste
2 TBSP Coconut oil

In a large skillet brown ground turkey- season lightly. Once browned- remove from pan- add coconut oil. Add Sweet potatoes, veggies of your choice and saute till tender. Add greens and apples and the rest of the seasonings- mix in cooked turkey.

This makes enough for breakfast all week. It stores well and tastes great reheated. Give it a try!
