Happy Snacking....

Let’s talk snacking- we all do it. We either crave something sweet, crunchy, salty, or a combination of all three…. I have some suggestions.

I don’t know the difference between a Jam and a Sweet Potato (according to Google- Yams and Sweet Potatoes are biologically unrelated plants. In the U.S. the names are used interchangeably.)- for this post- I will call them Sweet Potatoes- when I am craving something sweet- these babies are my favorite snack.

On my meal prep days- I will steam 5 -6 Sweet Potatoes in my instant pot (if you don’t have an instant pot- you are really missing out- will talk more about this in another post). I add a cup of water/or broth and steam them for 20 mins and they come out perfect every time.
Weekday afternoons- around 230pm when you get the craving for that candy bar- have a cooked Sweet Potato handy to snack on. I eat them cold (yes, I am weird). For more decadence- you can zap it in the microwave for a minute add a teaspoon of ghee and sprinkle with cinnamon. YUM!!

If you are looking for crunch- one of my favorite hand snacks is Asparagus! Just wash and snap of the ends and super tastey raw. Sprinkle with salt if you like.

Another great snack for salt craver's- Apple with pink Himalayan salt- Delish! You can even pop a salt rock or two in your mouth. Himalayan Salt helps if you get leg cramps. Typically cramps indicate you’re low in electrolytes. Try it for yourself. You can even sprinkle this on all of your snacks. :-)

Happy Snacking..

My first born....

I know as parents we are supposed to inspire our children. However, sometimes our children inspire us. I haven’t always been the best parent. I have made some costly mistakes. I was young, naive, selfish and plain clueless. When I watch my daughter raise her little family. I am inspired by her honesty, ambition, energy, and courage in which she approaches daily life. I love the way she laughs at things and doesn’t take them too seriously. She is a phenomenal mother. A loving, supporting, and encouraging wife. Today, my daughter is everything I wanted to be at her age, and she is everything I aspire to be today. What I love most about her- she is confident, strong, forgiving, relentless, kind and most of all that she is my first born.....
