Let’s talk about Quinoa (KEEN-wah)…
Quinoa is considered a SUPERFOOD! It’s gluten-free, high in
protein and one of the few plants that contains all nine essential amino acids.
It’s also high in fiber, magnesium, B-vitamins, iron, calcium, phosphorus,
vitamin E and other various antioxidants.
Quinoa is a grain crop that is grown for its edible seeds. Quinoa
used to be referred ad the “mother of all grains” and was held sacred by the Inca
Empire.
There are three main types: white, black and red. Quinoa is
considered an anti-inflammatory food. It’s also much higher in fiber than most
grains, with on source finding 17-27 grams of fiber per cup.
I have started to substitute Quinoa for rice, potatoes and
other starches. One of my favorite ways to eat Quinoa is in a salad. Here is my
go-to recipe. Easy to toss together and enjoy.
Kale and Quinoa
Salad
·
3 cups cooked quinoa (equals 1 cup dry quinoa)
·
10 cups chopped raw kale, stems removed
·
1 cup dried cranberries
·
·
For the dressing:
·
3 tablespoons balsamic vinegar
·
¼ cup apple cider vinegar
·
¼ cup extra virgin olive oil
·
1 heaping tablespoon of agave or honey (whatever
you have on hand)
·
½ teaspoon salt
It’s best chilled for at least an hour. I like to serve this
with grilled chicken, baked salmon or any lean protein.
Also, get creative- add various veggies to this salad. Try adding some Fetta Cheese. You can't go wrong.
